You can do this in the oven, but a quick microwave method works well: heat the flour in short intervals until the internal temperature reaches 165ºF, stirring between intervals to ensure even heating.

How To Make No Bake Cookie Dough Truffles…

Start by making the edible cookie dough—much like making classic cookie dough but without eggs. Cream room-temperature butter with both the brown and granulated sugars until well combined. Add vanilla and mix to incorporate.

Stir in the heat-treated flour and salt on low speed (or fold in by hand) until combined, then fold in the chocolate chips. The dough may feel slightly greasy; that’s normal and won’t affect the final truffles.

Scoop tablespoon-sized portions and roll into balls. Arrange the dough balls on a parchment-lined baking sheet or plate and freeze for at least 30 minutes. While they chill, melt the white chocolate until smooth.

Dip each frozen dough ball into the melted white chocolate, fully coating it, then return to the lined sheet. Chill in the refrigerator for 20–30 minutes to set the chocolate completely.

Store finished truffles in an airtight container in the refrigerator for up to one week.

Ingredients

  • ¾ cup (85g) unsalted butter room temperature
  • ½ cup (100g) light brown sugar packed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups (222g) gluten free flour blend heat treated (see recipe notes)
  • ½ teaspoon salt
  • cup (55g) semisweet chocolate chips
  • 16 ounces white chocolate melted

Instructions

  • Using a hand mixer or a stand mixer with the paddle attachment, cream the butter with both sugars until combined. Add the vanilla and mix until incorporated.
  • Add the heat-treated flour and salt, mixing on low until just combined. Fold in the chocolate chips.
  • Scoop tablespoonfuls of dough and roll into balls. Place them on a parchment-lined plate or baking sheet and freeze for at least 30 minutes.
  • Dip each frozen dough ball into the melted white chocolate to coat completely. Return to the lined sheet and chill in the refrigerator for 20–30 minutes to set.
