2 heads of dill
1 clove garlic
2 Tbsp pickling spices
1 hot pepper, cut in two
45 cucumbers, sliced
1 cup water
4 cups vinegar
1/2 cup non-iodized salt

Instructions

  1. Combine the dill, garlic, and pickling spices in a mixing bowl.
  2. Divide the mixture among 4 to 5 clean pint-sized jars.
  3. Place one piece of the hot pepper into each jar.
  4. Pack the sliced cucumbers tightly into the jars, leaving a little headspace.
  5. Bring the water, vinegar, and salt to a boil, stirring until the salt dissolves.
  6. Carefully pour the hot brine over the cucumbers, covering them completely.
  7. Seal the jars and refrigerate. Allow the pickles to develop flavor for several weeks before serving.
*These homemade garlic pickles are excellent with hamburgers.
