Breakfast is one of my favorite parts of the day, especially the slow, indulgent mornings at the weekend. We put on some music, make coffee, prepare a simple meal and sit together to enjoy the morning — sometimes going back for a second cup. Those relaxed breakfasts give us time to chat about plans for the day, revisit funny moments from yesterday, and enjoy the fact that we have time ahead of us to do what we like.

The ongoing dilemma for me is always what to make, especially on busy mornings. Skipping breakfast has never been an option — I was raised to treat it as the most important meal of the day, and that habit stuck. Also, I get “hangry” if I don’t eat something soon after waking.

When time is tight I sometimes default to peanut butter on toast, but I like variety. That’s how I landed on these quick breakfast parfaits: simple, flexible, and made from pantry staples. They’re perfect for mornings when you want something tasty and filling without spending much time in the kitchen.

I like the parfaits you can buy at coffee shops, but they’re often overpriced and include ingredients you might not love. These homemade versions let you swap components easily: use vanilla yogurt or fromage frais instead of plain yogurt, swap banana for berries or mango, or replace Belvita biscuits with graham crackers or digestive biscuits. They’re also easy to assemble the night before and keep in the fridge for a grab-and-go morning.

Ingredients

  • 1 pack Belvita (4 biscuits) — or substitute digestive biscuits or 6 graham crackers

  • 250 g (1 cup) plain yogurt

  • 1 banana

  • Honey (optional, for drizzling)

Directions

  • Crush the biscuits in a sandwich bag with a rolling pin until fine crumbs form. Divide the crumbs between two small bowls or glasses.
  • Spoon the yogurt over the crushed biscuits, distributing it evenly between the two glasses.
  • Top with sliced banana and, if you like, drizzle a little honey over the top.

Notes

  • These parfaits can be prepared the night before and stored in the fridge. If you do, assemble everything except the banana, and slice the banana on top just before serving to keep it fresh.
