Frankenstein Rice Cereal Treats with Creepy Candy Eyes

Frankenstein Crispy Rice Cereal Treats are an easy, no-bake Halloween snack that kids can help make. Both kids and adults love them.

These treats take classic crispy rice cereal bars and transform them into a recognizable Halloween favorite — Frankenstein’s monster. They’re simple to prepare, require no baking, and are a fun project to make with children.

One of my favorite finishing touches is Wilton’s candy eyes. The plain ones are versatile and useful year-round for character cupcakes and cookies. They also make versions with red veins and different colors, which are fun for a variety of spooky or silly decorations.

These treats are great for party trays at home, the office (adults enjoy them as much as kids), school events, or packaged in treat bags for giveaways and trick-or-treaters.

To make them: prepare classic rice cereal treats, allow them to cool, then frost with green icing. Dip the top edge in melted chocolate, attach two candy eyes with a dab of chocolate, and use the remaining melted chocolate to pipe a mouth. Chill briefly so the chocolate sets, and they’re ready to serve.

Frankenstein Crispy Rice Cereal Treats

Frankenstein Crispy Rice Cereal Treats are an easy, no-bake Halloween snack that kids can help make. Both kids and adults enjoy them.

Ingredients

  • 3 tablespoons unsalted butter
  • 10½ oz mini marshmallows
  • 6 cups crispy rice cereal
  • 1 cup green-tinted icing
  • 12 oz semisweet chocolate chips
  • 24 candy eyes (Wilton recommended)

Instructions

  1. Line a 9×13-inch baking pan with wax or parchment paper; set aside.
  2. Melt the butter in a large saucepan over low heat. Add the marshmallows and stir constantly until completely melted and smooth. Remove from heat.
  3. Stir in the rice cereal until every piece is coated with the marshmallow mixture.
  4. Press the mixture firmly into the prepared pan. Allow to cool completely.
  5. Heat about 1 inch of water in a saucepan until boiling. Place semisweet chocolate chips in a heatproof bowl that fits over the pan (double boiler method) without touching the water, and stir until melted. Transfer about 1/4 cup of the melted chocolate to a piping bag and set both aside to cool slightly.
  6. Cut the cooled cereal slab into 12 bars. Frost the top of each bar with green-tinted icing.
  7. Dip one short end of each bar into the melted chocolate, then place them on parchment or wax paper to set.
  8. Pipe a small dot of chocolate onto the back of each candy eye and press two eyes onto the green frosting of each treat, just below the chocolate-dipped edge.
  9. Use the remaining melted chocolate in the piping bag to draw mouths on each treat.
  10. Refrigerate the treats for about 30 minutes to set the chocolate before serving.
