This 3-ingredient slow-cooker salsa chicken is incredibly easy and flavorful — perfect over rice, in a tortilla, or served burrito-style with your favorite Mexican toppings!
Happy New Year — and welcome to a simple, healthy recipe that’s perfect for busy days. At the start of the year I like to focus on a couple of basic habits that make everyday life better: sleeping more consistently and eating satisfying, protein-rich meals. Both habits are surprisingly connected to how I feel and how well I stick to other healthy choices. This slow-cooker salsa chicken fits right into that plan: it takes five minutes to assemble, cooks hands-off, and yields a filling main dish that keeps you satisfied into the evening.
Sleep has been a big priority for me. In high school I regularly slept eight hours or more, but college and busy seasons have taught me that I don’t function well on chronic short sleep. When I get enough rest, my mood, energy, workouts, and cravings all improve. Building small, realistic sleep goals has helped me make steady progress.
The other priority is eating full meals with protein. When I eat a balanced dinner, my late-night sweet tooth fades and I’m less likely to graze endlessly. That’s why quick, reliable recipes that deliver protein and flavor are so valuable — especially when life is hectic and I don’t want to skip a proper meal.
This slow-cooker salsa chicken is one of those recipes. It’s simply chicken breasts, taco seasoning, and salsa. You can scale it up to make extra for leftovers, and the flavor depends largely on the salsa you choose, so pick one you enjoy. I like an organic, medium-style salsa, but mild or hot both work depending on your preference.
For weekly planning, I keep a flexible list of meals before I shop so I have ingredients for proper dinners throughout the week. That approach makes it easy to avoid the quick-snack dinners that leave me hungry later. When I make this salsa chicken, I usually cook a larger batch so there are leftovers for grain bowls, salads, or quick tacos.

I served mine over brown rice with a dollop of sour cream, which was delicious. Another favorite way is a burrito bowl with black beans, corn, pico de gallo, and avocado or guacamole. It’s also excellent wrapped in a whole-grain tortilla or placed on top of a salad for a hearty lunch.
