Ingredients

  • 4 Tablespoons salted butter
  • 6 cups mini marshmallows divided
  • 1 teaspoon pure vanilla extract
  • 6 cups gluten free crispy rice cereal

Instructions

  • Line a 9×9 inch pan with aluminum foil and spray with non-stick spray.
  • In a medium pot, melt the butter over medium-low heat. Reduce heat to low and add 5 cups of the mini marshmallows. Stir frequently until melted.
  • Remove from heat and stir in the vanilla and the remaining 1 cup of marshmallows. Stir until the marshmallows soften (a few small chunks are fine), then add the gluten free crispy rice cereal and mix until coated.
  • Transfer the mixture to the prepared pan. Let it sit a minute, then press gently into the pan with a spatula or lightly greased hands to compact.
  • Cool completely, then cut into 16–20 squares.
