Cilantro nutrition and health benefits

Cilantro is a nutrient-dense herb. It contains beta-carotene and vitamins A and C, and contributes minerals such as potassium and calcium.

Cilantro can support healthy blood pressure and digestive function; its potassium content helps maintain fluid balance and supports heart health.

The herb also provides iron, which helps prevent anemia, and its leaves contain antioxidants that may benefit cardiovascular health. Some studies suggest cilantro may have helpful effects for people with diabetes, though individual results vary.

Ingredients needed to make cilantro lime rice in small glass bowls.
  • Jasmine Rice: any long-grain white rice works; Jasmine offers a subtle floral aroma and slightly sticky texture when cooked.
  • Chicken Broth: you can substitute water, but broth adds depth of flavor.
  • Shallot or white onion: either works; shallot gives a milder, slightly sweeter note.
  • Cilantro: use fresh cilantro for the best flavor and aroma.

How to make Cilantro Lime Rice

Step by step photos making cilantro rice in a frying pan.
  1. Melt butter in a medium frying pan over medium heat. Add diced onion (or shallot) and minced garlic. Cook, stirring occasionally, for 2–3 minutes without letting the garlic burn. Add the rice and stir for about 30 seconds to coat the grains.
  2. Stir in cumin, garlic powder, salt, pepper and the chicken broth (or water). Bring to a simmer, cover, reduce the heat and cook for 15–20 minutes. Do not lift the lid while the rice cooks.
  3. When the rice is tender, fluff with a fork. Stir in lime zest, lime juice and chopped cilantro. Mix gently and serve warm.

What is the best water/broth to rice ratio for Jasmine rice?

  • Use 1 cup rice : 1 1/2 cups water or broth for typical Jasmine rice. This yields about 3 cups cooked rice.
  • For drier rice, reduce the liquid by 1/4 cup.
  • For moister rice, increase the liquid by 1/4 cup.

Where is Jasmine rice from and how is it different than Basmati?

Jasmine rice originates from Thailand. It is a long-grain variety with a delicate floral aroma and a slightly sticky, soft texture after cooking. Jasmine contains more amylopectin than Basmati, which gives it a clingier texture ideal for rice bowls. Basmati, in contrast, cooks up drier and with separate, fluffy grains and has a distinct nutty aroma.

How to store Cilantro lime rice

Cool leftover rice completely, then store it in an airtight container in the refrigerator for up to 3–4 days. Reheat gently and add a splash of water or broth if it needs moisture.

Better than Chipotle Cilantro Lime Rice

A bright, fragrant cilantro-lime rice that pairs with chicken, veggies, beans, or any meal that needs a citrus-herb lift.

Ingredients

  • 2 Tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup white onion or 1 shallot, diced
  • 2 cups Jasmine rice
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • Pinch salt and pepper, to taste
  • 3 cups chicken broth, low sodium (or water)
  • 2 limes, juiced
  • 1–2 Tbsp lime zest (from the 2 limes)
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Melt the butter in a medium frying pan over medium heat. Add the onion (or shallot) and garlic; cook 2–3 minutes until softened but not browned. Add the rice and stir about 30 seconds to coat.
  2. Add cumin, garlic powder, salt, pepper and chicken broth. Bring to a simmer, cover, lower the heat, and cook 15–20 minutes without lifting the lid.
  3. When the rice is done, fluff with a fork. Stir in lime zest, lime juice and chopped cilantro. Serve warm.

Notes

  • Include some cilantro stems when chopping; they add flavor.
  • Do not lift the lid while rice cooks—steam is essential for even cooking.
  • Rinsing rice is optional but recommended to remove excess surface starch for separate grains. Rinse under cold water until it runs clear.
