Vegan Gluten-Free Golden Syrup Flapjacks Recipe

A ridiculously easy vegan recipe for one of the most comforting bakes — these golden syrup flapjacks use just four ingredients and can be made naturally gluten-free.

Flapjacks always take me back to childhood bake sales, where they were a reliable favourite. They’re quick, inexpensive and unfussy to make, yet every bite is comforting and satisfying.

If you prefer low-effort baking, these are ideal — minimal ingredients, straightforward method and great results.

One of the best things about this flapjack recipe is how easy it is to personalise. Mix in raisins, chocolate chips, desiccated coconut, seeds or chopped nuts to suit your taste.

If golden syrup is hard to find, you can substitute light corn syrup, maple syrup, agave nectar or brown rice syrup — each will give a slightly different flavour and texture but will still work well.

Super simple flapjacks made with golden syrup. Use gluten-free rolled oats to keep them naturally gluten-free. Perfect for an afternoon treat, bake sales or homemade gifts.

Ingredients

  • 150 g / 2/3 cup vegan butter or margarine
  • 4 tbsp golden syrup
  • 50 g / 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 275 g / 3 cups rolled oats (use gluten-free oats if required)

Instructions

1. Preheat the oven to 150°C fan / 170°C / 325°F / gas 3. Line a 20 x 20 cm (8 x 8 inch) baking tin with greaseproof paper.

2. In a large saucepan, gently melt the vegan butter and golden syrup together over low heat. Once melted, remove from the heat and stir in the brown sugar, vanilla and oats until thoroughly combined. If you’re adding extras (raisins, chocolate chips, seeds or nuts), fold them in now.

3. Press the mixture evenly into the prepared tin and bake for 20–25 minutes, depending on whether you prefer a chewier or crisper flapjack. Allow to cool slightly in the tin so the bars set, then cut into 12 medium or 16 small squares. Store in an airtight container for up to two weeks.
