Bacon Potato Salad

  • 2 potatoes
  • 7 eggs
  • 1 carrot
  • 7 cooked bacon strips
  • 1 red bell pepper
  • 15 oz corn
  • 1 onion
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh dill
  • 1 cup mayo

Instructions

How to make Bacon Potato Salad:

  • In a medium saucepan, place the potatoes, eggs, and carrot in water and bring to a boil. After boiling for 7 minutes, remove the eggs and transfer them to cold water to stop cooking. Continue boiling the potatoes and carrot until they are tender. Drain and cool before handling.

  • While the vegetables and eggs cool, chop the remaining ingredients—onion, bell pepper, cooked bacon, corn, and garlic—and place them in a large bowl. Peel and chop the cooled eggs, dice the cooled potatoes and carrot, then add them to the bowl. Stir in the mayonnaise, add salt and pepper to taste, and fold in the fresh dill. Mix gently until everything is combined and serve chilled or at room temperature.
