If you’re familiar with my blog or know me in real life, you know I love to run. I’ve completed one marathon (NYC 2005) and many half-marathons. Nowadays I typically run about five miles most mornings, sometimes more, sometimes less.

I’ve always been a morning runner. I used to head out the door right after waking, to Alex’s amazement — he could never understand how I could go from asleep to exercising in ten minutes. Since Owen was born, my routine has shifted. He’s often awake before me, so instead of tying my shoes immediately, I’m pouring juice, refereeing breakfast choices, and delaying my run until after daycare drop-off or once Alex is awake and caffeinated.

Even with those changes, I rarely eat a full breakfast before running because I dislike running on a full stomach. I do like a small bite to stave off hunger and give a little energy boost. Typical quick snacks for me are a small handful of dry Raisin Bran or a thin slice of bread with a smear of peanut butter.

This recipe combines creamy Greek yogurt, a drizzle of honey, and a touch of vanilla spread on a baking sheet, then topped with classic trail mix elements: granola, roasted salted peanuts, dried cranberries, and a bit of chocolate in the form of mini M&Ms. It’s sweet, salty, crunchy, and refreshing — an easy, balanced snack that works for pre-run, post-run, or anytime.

It couldn’t be simpler. I used Fage 2% plain Greek yogurt in a 2-cup container and stirred the honey and vanilla directly into it, so no extra bowls were needed. Spread the yogurt mixture on parchment-lined baking sheet in an even layer, sprinkle on the toppings, and freeze until set. After a couple of hours, break into shards and enjoy.

Store the bark in an airtight container in the freezer for up to a week, though it rarely lasts that long. Ingredients

    plain Greek yogurt
    2% or full-fat
  • 2

    honey
  • Seeds from one vanilla bean
    or 1 teaspoon pure vanilla extract
  • 1/2

    granola
  • 1/4

    chopped roasted
    salted peanuts
  • 1/4
    cup
    chopped dried cranberries

    mini M&Ms
  • 1/4-1/2

    flaky sea salt

Instructions

  1. Line a rimmed baking sheet with parchment paper. In a bowl or in the yogurt container, mix the yogurt, honey, and vanilla. Pour the mixture onto the prepared baking sheet and spread it into an even layer about 1/4-inch thick. Sprinkle with granola, peanuts, cranberries, mini M&Ms, and flaky sea salt if using. Transfer the baking sheet to the freezer and freeze until firm, about 2 hours. Break into shards and serve. Store in an airtight container in the freezer for up to about a week.
