Mushroom Spaghetti Bolognese: Rich Homemade Meat Sauce Recipe

Spaghetti are popular worldwide and remain the most famous type of pasta — including in Germany. Here is a simple, flavorful recipe for Spaghetti Bolognese: spaghetti served with a meaty tomato sauce that includes fresh mushrooms.
For this dish we recommend thin spaghetti rather than angel hair; however, you can use angel hair or any other pasta you prefer. The meat sauce also pairs well with other pasta shapes. This recipe is easy to prepare — give it a try. Happy cooking!

Ingredients Spaghetti Bolognese

(serves 4)
300–400 g extra-lean ground beef
1 medium onion
3 spring onions (green onions)
1 tbsp olive oil
1 medium carrot
3 tbsp tomato paste
1 tbsp dried oregano (or an Italian herb mix without added sugar or spices)
Salt and freshly ground black pepper
10 small brown mushrooms
1/4 cup water
250 g thin spaghetti
Parmesan cheese, for serving


Cooking Instructions Spaghetti Bolognese

1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to the package instructions.
2. Meanwhile, finely chop the onion. Trim and slice the spring onions and peel and dice the carrot. Clean and slice the mushrooms; remove tough stems if necessary.
3. Heat the olive oil in a large skillet over medium heat. Add the onion, spring onions and carrot and sauté for a few minutes until softened.
4. Add the ground beef and cook, breaking it up with a spoon, until it turns light brown and is mostly cooked through.
5. Season with salt, pepper and oregano. Stir in the water and tomato paste, mixing thoroughly. Reduce the heat and let the sauce simmer for several minutes so the flavors meld.
6. Add the sliced mushrooms, stir to combine, and cook for another 2–4 minutes. Taste and adjust seasoning with more salt and pepper if needed.
7. When the pasta is ready, drain it in a sieve. If desired, toss the hot spaghetti with a little butter to prevent sticking and keep it warm until the sauce is ready (cover the pot with a kitchen cloth and lid to retain heat for a few minutes).

Place the spaghetti on plates, spoon the Bolognese sauce over the top and sprinkle with freshly grated Parmesan. Serve with a simple green salad or enjoy the pasta on its own.
