Spring brings fresh air, longer evenings, and the perfect excuse to bake something cheerful. Easter is one of my favorite holidays for that very reason: it’s a food-filled celebration at a bright, optimistic time of year. The Chocolate Funfetti Hidden Bunny Cake is a playful, crowd-pleasing dessert that captures the joy of the season while tasting as good as it looks.

This surprise-inside cake combines a tender vanilla funfetti loaf shaped into little bunnies with a rich chocolate loaf that encases them. When you slice into it, the hidden bunny shapes appear like a charming Easter surprise. The contrast of light, moist funfetti and gently chocolatey cake makes each slice delightful without being overly rich—so go ahead and indulge in a second helping if you like.

Despite its impressive reveal, the cake is straightforward to prepare. The process involves baking a funfetti loaf first, cutting out frozen bunny shapes, then arranging those shapes in a chocolate loaf batter and baking again. It’s easier than assembling a layered cake, and it’s very adaptable: swap the shape and sprinkles to suit other holidays or themes—stars for the Fourth of July, a tree for winter holidays, and so on.

One practical note: choose a cookie cutter that fits comfortably inside your loaf pan. I learned the hard way that cutters that are too tall will chop off the ears, and part of the charm is having full bunny shapes inside the cake.

Photography aside, the flavor and presentation make this recipe worth trying. If you want a beautiful, memorable dessert for an Easter gathering, this Chocolate Funfetti Hidden Bunny Cake will impress guests and spark smiles. The recipe steps below walk you through making the funfetti loaf slices, freezing the cut-outs, and assembling the chocolate loaf around the frozen bunnies for the best results.

Happy baking, and enjoy sharing this whimsical Easter dessert with family and friends!

Ingredients
Funfetti loaf:
  • 2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 5 large eggs at room temperature
  • 2 tablespoons jimmies I used an Easter mix
Chocolate loaf:
  • 1/2 cup unsalted butter at room temperature
  • 1 1/2 cups granulated sugar
  • 2/3 cup Dutch-process cocoa powder
  • 2 teaspoons vanilla extract
  • 2 teaspoons espresso powder optional
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 large eggs at room temperature
  • 1 1/4 cups all-purpose flour
  • 3/4 cup whole milk
Instructions
Funfetti loaf:
  1. Preheat oven to 325°F (163°C). Spray a 9- by 5-inch loaf pan with cooking spray and line it with parchment paper, leaving an inch of overhang on the sides. Spray the paper and dust with flour, then tap out the excess flour.
  2. Sift flour and salt together. In a stand mixer fitted with the paddle attachment, cream butter, sugar, and vanilla until light and fluffy, about 3–5 minutes. Add the eggs one at a time, beating well and scraping the bowl after each addition.
  3. On low speed, add the flour mixture until just combined. Gently fold in the jimmies or sprinkles.
  4. Pour the batter into the prepared pan and bake 75–85 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes, then lift the cake out using the parchment and cool completely.
  • Once cooled, slice the loaf into 1-inch slices. Use a cookie cutter to cut out bunny shapes (or other shapes). Arrange the cut-outs on a parchment-lined baking sheet and freeze for 1 hour while you prepare the chocolate loaf.
  • Chocolate loaf:
    1. Preheat oven to 350°F (177°C). Prepare a 9- by 5-inch loaf pan as before: spray, line with parchment, spray again, and dust with flour, tapping out the excess.
    2. In a stand mixer with the paddle attachment, combine butter, sugar, cocoa powder, vanilla, espresso powder (if using), salt, and baking powder. Mix on medium until smooth, about 30 seconds. Add the eggs one at a time, mixing and scraping the bowl after each addition.
    3. On low speed, add half the flour and mix until just incorporated. Add all the milk, mix until just combined, then add the remaining flour and mix on low until just incorporated.
    4. Pour enough chocolate batter into the prepared pan to cover the bottom evenly. Remove the frozen funfetti bunnies and arrange them in a line slightly shorter than the pan depth; you may have extras. Carefully place the bunny log on top of the batter, then pour the remaining batter over them to just under the rim. Reserve any extra batter to bake as a cupcake. Bake 44–50 minutes, until a toothpick in the center comes out clean.
    5. Cool in the pan on a wire rack for 10 minutes, then use the parchment to lift the cake out and cool completely. Slice to reveal the hidden bunny shapes, serve, and enjoy the surprise reaction from your guests.
