Gluten Free Rice Krispies Treats
Ingredients
- 4 Tablespoons salted butter
- 6 cups mini marshmallows divided
- 1 teaspoon pure vanilla extract
- 6 cups gluten free crispy rice cereal
Instructions

Line a 9×9 inch pan with aluminum foil and spray with non-stick spray.

In a medium pot, melt the butter over medium-low heat. Reduce heat to low and add 5 cups of the mini marshmallows. Stir frequently until melted.

Remove from heat and stir in the vanilla and the remaining 1 cup of marshmallows. Stir until the marshmallows soften (a few small chunks are fine), then add the gluten free crispy rice cereal and mix until coated.

Transfer the mixture to the prepared pan. Let it sit a minute, then press gently into the pan with a spatula or lightly greased hands to compact.
