Meet my beautiful Cauliflower Wings and Mixed Greens Salad — a vibrant, flavorful bowl that’s as pleasing to the eye as it is to the palate. Bright colors, contrasting textures and bold flavors come together in a dish that’s nourishing, satisfying and easy to make. Whether for lunch or dinner, this salad hits the spot and leaves you refreshed and content.
This salad is packed with nutrients and vitamins: cauliflower brings fiber and antioxidants, mixed greens add essential vitamins, and a tangy buffalo-style sauce gives the wings terrific flavor. Paired with roasted sweet potatoes and a light vinaigrette, the bowl becomes a balanced, filling meal that feels indulgent but remains wholesome.
One small but impactful addition is the microgreens visible in the photos. They add a delicate crunch and an earthy note that brightens every bite. I also love the visual contrast and subtle nuttiness that black sesame seeds provide when sprinkled over the sweet potatoes.

At first it might seem unusual to pair cauliflower buffalo wings with a salad, but the combination works wonderfully — spicy, crisp, and comforting all at once. My husband and I devoured our bowls quickly; the balance of textures and the bright dressing made this one of those meals you want to eat again and again.

You can easily customize each bowl: add more wings, include extra sweet potatoes, or increase the greens. I added roasted sweet potato cubes to my bowl — a simple upgrade that took the dish from great to outstanding. The sweet potatoes roast quickly with just oil and a little seasoning, and they pair perfectly with the buffalo flavor.
The light vinaigrette is intentionally simple: balsamic vinegar, extra virgin olive oil, pink Himalayan salt and freshly cracked black pepper. It dresses the greens without overpowering the wings or roasted sweet potatoes, tying the whole bowl together.
