
Who doesn’t love a good chicken nugget? And by good, I mean something far better than the cheap frozen kind.
These homemade chicken nuggets are perfect finger food for toddlers, kids and adults. We started making them when our son was a toddler, and they’ve been a family favorite ever since. They’re simple to prepare, customizable, and can be made in bulk and frozen for later convenience.
To enjoy the convenience of frozen nuggets without the additives, freeze them raw. Arrange the shaped nuggets in a single layer on a tray and place in the freezer. Once frozen, transfer them to a sealed container or bag. When you’re ready to cook, bake from frozen—add about 3–5 minutes to the baking time or until fully cooked through.
This recipe yields approximately 35 nuggets.

Ingredients
- 500g chicken mince
- 1 zucchini, grated and squeezed to remove excess moisture
- 1 carrot, grated
- 1/2 – 1 cup corn kernels (defrosted), optional
- 1 egg
- Breadcrumbs for coating
Instructions
- Preheat the oven to 200°C. Lightly grease a baking tray or spray it with oil.
- Combine the chicken mince, grated zucchini, grated carrot, corn (if using) and egg. Use your hands to mix until well combined.
- Shape teaspoonfuls of the mixture into nugget shapes, roll them in breadcrumbs, and place them on the prepared tray.
- Lightly spray or drizzle the nuggets with a little oil. Bake for 15–20 minutes, turning halfway through, until cooked through and golden.
