Kale and Sausage Baked Eggs Recipe for a Hearty Breakfast

For a long time I thought of baked eggs as holiday food. In my family it’s a tradition to make baked eggs for Easter and Christmas — neither celebration feels complete without them.

Baked eggs have always been one of my favorite simple meals, but it took me years to realize they don’t belong only to special occasions. Now we enjoy them often, sometimes even weekly.

Baked eggs can be as simple as eggs and cheese baked until perfectly melted. Lately, kale has been a favorite ingredient in our house, so I’ve been finding ways to add it to many dishes.

One cup of kale delivers an impressive nutrient boost: calcium, vitamin B6, magnesium, and particularly high amounts of vitamins A, C, and K.

That’s why I upgraded our usual baked eggs to “superfood” status by adding kale.

These baked eggs with kale and sausage are special enough for a holiday table, yet simple enough for a weekday breakfast.

Admittedly, we’ve been eating them a lot lately — they’re that good.

Baked Eggs with Kale and Sausage

These baked eggs with kale and sausage are tasty enough for holiday menus and quick enough for everyday breakfasts.

Ingredients

  • 8 eggs
  • 2 1/4 cups packed baby kale, washed and finely chopped
  • 3 tablespoons cream or whole milk
  • 8 oz cooked ground sausage
  • 1 cup grated Irish cheddar (or other sharp white cheddar)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease an oven-safe casserole dish.
  3. Spread 2 cups of the chopped kale evenly across the bottom of the dish.
  4. Crack the eggs over the kale, leaving a little space between each one.
  5. Drizzle the cream or milk evenly over the eggs, then sprinkle the cooked sausage on top.
  6. Finish with the remaining 1/4 cup of kale and the grated cheddar.
  7. Bake for 15–25 minutes, until the whites are set and the yolks are cooked to your liking.
  8. Season with salt and pepper to taste and serve warm.
