We love this Instant Pot chicken fajitas recipe because it’s light, flavorful, and simple. The chicken, peppers, and onions take center stage, so I keep the seasoning straightforward and let the ingredients shine.

One important Instant Pot tip: don’t forget the water. I’ve accidentally started the pot without enough liquid and wondered why it wouldn’t seal. After the first cook, if there’s a lot of liquid, drain off all but about a cup before adding the vegetables.

Once the chicken is cooked, add the sliced peppers and onions on top. If you look closely you can see the chicken peeking out from under the vegetables. Then stir in a can of tomatoes and taco seasoning for bright, familiar flavor.

Next time I’ll add a red pepper too — the orange and yellow peppers lost some color during cooking, giving the dish a predominantly yellow appearance. But that’s fine: think of it as eating sunshine in every bite.

I follow a low-carb diet, so I serve these fajitas over cauliflower rice. Sometimes I add a little cheese and a dollop of Greek yogurt for extra creaminess — delicious. Of course, these fajitas are also great in flour or corn tortillas if you prefer.

Every bite was fantastic — like a homemade Chipotle, just sunnier. This is one of those recipes you’ll look forward to eating again as leftovers, even for breakfast.

Instant Pot Chicken Fajitas – Keto / Low Carb
Ingredients
- 3 large chicken breasts (frozen)
- 2 tbsp taco seasoning
- 1 can tomatoes
- 1/2 cup water
- 2 bell peppers, sliced thickly
- 1/2 large yellow onion, sliced thickly
Instructions
Chicken:
Cook chicken on manual for 17 minutes, then quick release.
Remove excess liquid, leaving about 1/2 cup. Add the sliced peppers and onions (slice them thick). Stir in the tomatoes or salsa and the taco seasoning.
Cook on manual for another 10 minutes, or until the chicken shreds easily. Use quick release.
