This recipe has a secret ingredient—can you guess it?

Drum roll… it’s almond extract. A small amount of pure almond extract lifts the flavors without making the loaf taste like almonds. Think of it like vanilla: it brightens and enhances the other ingredients, giving the apple and spice notes more presence. Don’t skip it.

Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup + 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pure almond extract
  • 1 1/2 cups chopped apples (1/4–1/2 inch chunks)
  • 1 cup shredded apples, tightly packed (juices included)
  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, combine the butter, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Using a whisk or electric mixer, cream until fluffy, about 3–4 minutes.
  4. Beat in the eggs, vanilla, and almond extract.
  5. Fold in the chopped and shredded apples with a large spoon. The butter mixture may curdle — that’s normal.
  6. Add the flour and mix gently until combined. Stop when no dry streaks remain; avoid overmixing.
  7. Line a 9×5-inch loaf pan with parchment paper.
  8. Spoon the batter into the pan and smooth the top evenly.
  9. Bake 80–82 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.
  11. Allow to cool at least 20 minutes before slicing. Serve warm or at room temperature.

Notes

  • You will need 3–4 apples total. Peel and core before preparing.
  • Prep the apples before starting the batter to keep the process smooth.
  • Storage: Leave the loaf at room temperature for up to 5 hours. After that, wrap or place in an airtight container. If kept longer than about 10 hours total, refrigerate to prevent spoilage.

Homemade Apple Bread

I called this “Apple Loaf” because it sits between a quick bread and a cake: soft and tender with a fine crumb, yet hearty enough for breakfast. The texture is balanced — not too dense, not too cake-like — and it holds up well for slicing and serving.

Chopped AND Shredded Apples?

Yes — both are used on purpose. Chopped apples give visible chunks and a contrasting bite throughout the loaf, while shredded apples distribute flavor and moisture evenly because the tiny pieces melt into the batter. The result is pronounced apple flavor in every bite plus satisfying texture from the chunks.

You can even use two different apple varieties: a firm baking apple for the chopped pieces and a juicier, more flavorful apple for shredding. I used Honeycrisp for everything, but next time I might shred a sweeter variety for extra juice and flavor.

One-bowl, easy method

This recipe uses a single bowl for mixing. You will need a plate, a knife, a grater, parchment paper, and a 9×5-inch loaf pan. No mixer is required, though creaming the butter and preparing the apples take the most time. Prep the apples before you start mixing so everything moves smoothly.

Why bake at 325°F?

Baking at a lower temperature prevents the crust from over-browning while allowing the center to bake through and stay moist. The loaf takes about 1 hour 20 minutes to bake, but the gentle heat preserves tenderness and creates a soft crumb.

The aroma

The scent from cinnamon, nutmeg, almond extract, butter, and apples is irresistible. It’s the kind of smell that fills the kitchen and makes everyone ask, “What’s baking?”
