Ingredients
- 1.1 lbs chicken breast
- 1 cup buffalo mozzarella
- ½ oz. fresh basil
- 2 oz. cherry tomatoes
- 2 tablespoons olive oil, extra virgin
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
Ingredients are available in both Metric and US Customary measurements.
Instructions

Slice the chicken into long, thin strips. Place between two pieces of plastic wrap and pound flat.

Cut the mozzarella into small strips (about ½ × ¾ inch / 1 × 1½ cm). Wrap each piece in one or two basil leaves.

Roll each mozzarella parcel inside a strip of chicken. Repeat until all chicken is used.

Thread three rolls onto each skewer, adding a cherry tomato between the rolls.

Brush skewers with olive oil and season with salt and pepper.

Grill on a hot barbecue or grill for 8–10 minutes, turning often, until golden and cooked through. Serve immediately.
Notes
2. Other vegetables like bell peppers or zucchini work well between the rolls.
3. Turkey option — turkey breast can be used instead of chicken and rolls up nicely.
