Bagels can feel indulgent, but you can still enjoy them while keeping meals lighter. Using a thin bagel reduces the doughy bulk while keeping all the flavour.

These thin bagels are a favourite because they deliver the classic bagel texture without the heavy breadiness. They make a great base for a fast, fresh lunch.

Pesto Caprese Bagel ingredients

Choose red or green pesto for this sandwich. A chilli pesto adds a pleasant kick if you like a bit of heat, but a mild basil pesto works beautifully too.

I usually serve the bagel with a small side salad of lettuce, tomato and cucumber, which is optional but adds a refreshing contrast.

Description

A simple, flavour-packed lunch that pairs thin bagels with fresh mozzarella, ripe tomato, basil and your choice of pesto. Perfect for a quick meal at home or a portable lunch when components are packed separately.


Ingredients

  • 1 thin bagel
  • ½ tbsp pesto (red or green)
  • 30g fresh mozzarella, sliced
  • 1 tomato, sliced
  • 4 basil leaves

Instructions

  1. Split the bagel and spread the pesto on one cut side.
  2. Layer the mozzarella slices, tomato and basil on top of the pesto, then close with the other half of the bagel.
  3. Serve immediately with a side salad if you like, or pack components separately for a lunchbox and assemble when ready to eat.

Notes

This recipe tastes best eaten straight away. If preparing for work or school, keep the pesto, cheese and tomato in separate containers to avoid sogginess and assemble when ready to eat.
