A delicious lunch, either at home or at work, made with thin bagels, mozzarella and pesto

Bagels can feel indulgent, but you can still enjoy them while keeping meals lighter. Using a thin bagel reduces the doughy bulk while keeping all the flavour.
These thin bagels are a favourite because they deliver the classic bagel texture without the heavy breadiness. They make a great base for a fast, fresh lunch.

Choose red or green pesto for this sandwich. A chilli pesto adds a pleasant kick if you like a bit of heat, but a mild basil pesto works beautifully too.
I usually serve the bagel with a small side salad of lettuce, tomato and cucumber, which is optional but adds a refreshing contrast.

This bagel is best enjoyed immediately. If you’re packing it for work, keep the components separate and assemble the bagel just before eating to preserve texture and freshness.
