Ingredients
For the Chicken
- 2 pounds (907 g) chicken
- 1 cup (245 g) tomato sauce or salsa
- 2 Tablespoons (30 ml) Worcestershire or soy sauce
- 1 Tablespoon (15 ml) chili powder
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) onion powder
- 1 teaspoon (5 ml) garlic powder
- 1/2 teaspoon (2.5 ml) salt, or more to taste
- Fresh cracked black pepper to taste
- 1/2 teaspoon (2.5 ml) chipotle powder (optional, for heat)
For the Salad
- 6 cups (1.5 L) chopped lettuce
Optional Toppings
- Salsa
- Cheese
- Sliced avocado
- Lime wedges
- Hot sauce
- Sliced radishes
- Diced red onion
- Sour cream

Instructions
- Add the chicken and all chicken ingredients to the slow cooker: tomato sauce or salsa, Worcestershire (or soy sauce), chili powder, cumin, onion powder, garlic powder, salt, pepper, and optional chipotle powder. Stir to combine so the spices are evenly distributed.
- Cook on low for 6–8 hours or on high for 4–5 hours, until the chicken is tender and fully cooked.
- Remove the chicken from the slow cooker and cut into 1–2 inch pieces. Return the pieces to the slow cooker and use two forks to shred the chicken into bite-sized pieces, mixing with the sauce.
- Taste and add more salt or pepper if needed.
- To serve, top the chopped lettuce with shredded chicken and your preferred toppings.
