TROPICAL GREEN SMOOTHIE

I make this Tropical Green Smoothie weekly, and now that summer is here it’s the ideal refreshing blend to enjoy. Light, bright and cooling, it’s a go-to on warm days.
 
Some months ago I attended a Vitamix event at the Vitamix Store in Solon, Ohio. I’d long wanted one, and after using it for a few months I can confirm these blenders live up to the hype. They handle smoothies, soups, dips and baby food with impressive speed and smoothness.

If you don’t own a Vitamix, don’t worry—this smoothie works in any blender. Apples can be a little tough, so if your blender is less powerful, chop the apple into smaller pieces, add a bit more water, or increase the frozen pineapple to 1 to 1½ cups for easier blending. Either way, the result is delicious.
 
Mint may seem like an unusual addition, but a couple of leaves add a fresh, cooling note that complements the fruit and greens. If you grow mint, it’s a great way to use it beyond iced tea or salads like tabbouleh.
